Spray Dried Coffee

Spray dried coffee is the "powdered" form of instant coffee and is the most economical and popular instant coffee product in bulk. Similar to the freeze dried and agglomerated forms, there are three main manufacturing stages: extraction, concentration and drying. To extract, freshly roasted and ground coffee is put into a series of percolation columns, typically 5-10, in which hot water and pressure are applied to the grounds to yield an extract with approximately 20% soluble coffee solids, and the balance water.

Because of the high water content this extract must be concentrated before drying, most commonly through a heat evaporation process which effectively boils off the water at lower atmospheric pressure and temperature. Other concentration methodology is applied such as freeze concentration, that better preserves the important volatiles and aromatics that are significantly dissipated in the heat evaporation process. The thickened extract is then pumped to a spray dried tower where high pressured hot air transforms the liquid extract in the final powdered form.
