The use of extracts, concentrates and oils from coffee has increased dramatically over the past decade; with primary uses being creation of coffee-based beverages and injecting flavoring and aroma agents in food and beverage products. There has also been a marked increase in concentrated liquid coffees, utilizing extracts or oils as bases, widely used in the foodservice and convention businesses.
The process of producing liquid extract begins with the commercial extraction of roast and ground coffee, from which the resulting product is generally concentrated to a pre-determined brix level (percentage of solids). Although some shelf-stable products are produced commercially, liquid extracts are most commonly frozen and stored and transported in that state.
Coffee oil, in turn, is produced from squeezing roasted coffee beans with a hydraulic press designed specifically for that purpose. The process extracts only the aromatic and flavorful oil present in the roasted coffee, leaving behind the remaining extractable coffee solids. Coffee oil is highly concentrated and is generally shipped well sealed, yet unrefrigerated.
